I dropped by the honey shop this week and tasted a few different types of local honey before settling on a quart of Mountain Gambel Oak. I learned that this honey is made from the sap of oak trees rather than from floral nectar. Nearly all of the honey you can find in health food stores is actually from Brazil, Mexico, or Canada, and buying it doesn’t support the local bees and beekeepers. Buying local honey is a good thing, but this store makes the selection process a joy as well.

Gadiel Ramirez makes honey. His shop is called Honey Salón – Honey Salón website. Next time you come to Santa Fe you should pay him a visit.
